Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the thick body of the batter, giving the fritters their soft, creamy interior.
Eggs
Yolks enrich and set the batter, while whipped whites add lightness and help the fritters rise.
Milk
Cooks with the rice to create a moist, tender batter.
Sugar
Sweetens the batter and helps the outside brown evenly when fried.
Butter
Fries the fritters, adding richness and golden browning to the surface.

The step that matters

Fold the beaten whites into the mixture. Whipped egg whites hold air that lightens the batter. Folding gently, rather than stirring, keeps that air from collapsing, so the fritters stay light instead of dense.

Swap the lemon

How well each one fits the dish's main ingredients (rice, sugar, cinnamon, milk, egg, butter):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against rice, sugar, cinnamon, milk, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
