Why it works: Artichoke and garlic match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 600 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Timbales a LA Renaissance

Ingredients

Directions

  1. Prepare a salpicon by mixing truffles, chicken, artichoke bottoms, and garlic cut into 1/4 inch squares with reduced espagnole sauce, meat glaze, and tomato sauce.

  2. Butter the insides of timbale molds.

  3. Place a thin round piece of red beet-root at the bottom of each mold, cut a small circle in the center, and replace it with a green cooked pea.

  4. Garnish the mold with chicken cream forcemeat on the bottom and sides.

  5. Set a ball of the prepared salpicon in the center and finish as directed in the reference recipe.
