Why it works: Peas and mint are a kitchen classic. They rank in the top 2% of all ingredient pairs, and cooks put them together in 1,137 recipes. Both carry 1-octen-3-ol, which smells mushroom, earthy. The science ↓
Roast Quarter of Lamb
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Remove excess fat around the kidney of the hind-quarter of lamb.
Skewer the lower joint up to the fillet.
Dredge the lamb with salt and flour.
Roast
Place the lamb in a 350°F (175°C) oven and heat slowly.
Increase the oven temperature to 400°F (200°C).
Add ½ pint of water and 1 teaspoon of salt to the dripping pan.
Baste the meat occasionally with the liquid.
Roast for about 2 hours.
Serve
Serve with lettuce, green peas, and mint sauce.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Lamb
- Provides the main meat, which becomes tender and juicy during slow roasting.
- Flour
- Coats the surface so it browns and forms a crisp, flavorful crust.
- Salt
- Seasons the meat and helps draw out flavor from the surface.
