Ginger Snaps

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the dough

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, cream together the brown sugar and butter.

  3. Stir in the molasses and ground ginger.

  4. Add the baking soda, ground cloves, cinnamon, and allspice.

  5. Gradually mix in enough flour to form a dough that can be rolled out very thin.

Shape and bake

  1. Roll out the dough and cut into desired shapes.

  2. Place on a baking sheet and bake for 10-12 minutes.

What each ingredient does

Butter
Creams with sugar to give the dough richness and a tender, crisp texture.
Molasses
Adds moisture, dark color, and deep flavor that gives the snaps their character.
Baking soda
Reacts with the acidic molasses to lighten the dough and help it spread and crisp.
Brown sugar
Adds sweetness and moisture, and helps the cookies brown and stay chewy-crisp.
Flour
Provides the structure that lets the dough be rolled out very thin.

The step that matters

Rolling the dough very thin. Ginger snaps stay crisp only when the dough is rolled very thin. Thicker pieces bake softer and chewier, so the thickness controls the final texture.

Swap the ginger

How well each one fits the dish's main ingredients (sugar, butter, molasses, clove, cinnamon, allspice, flour):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Gingerthe original
  4. Turmericfits less well

Fit is the average pairing score against sugar, butter, molasses, clove, cinnamon, allspice, flour. Candidates are from the same food group and used in at least 100 recipes.
