Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dry peas
Provide the main body and pea flavour of the soup once cooked and mashed.
Soup stock
Supplies the liquid base that carries the flavour and volume of the soup.
Flour
Thickens the soup as its starch swells during cooking.
Granulated sugar
Adds sweetness that balances the savoury pea flavour.

The step that matters

Making the flour paste. Flour added directly to hot liquid clumps, so it must first be mixed smooth with a little cold liquid. Starch then thickens evenly as the soup cooks.

Swap the peas

How well each one fits the dish's main ingredients (flour, sugar):

  1. Almondfits better
  2. Chestnutfits better
  3. Milletfits better
  4. Peasthe original

Fit is the average pairing score against flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
