Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Combine flour, treacle, aniseed, ginger, and cloves to form an elastic paste.

  2. Cover and let the paste rest overnight.

Shape and bake

  1. Roll out the paste to ⅛ inch thickness.

  2. Use fancy cutters to stamp out shapes.

  3. Place the cakes on a buttered baking sheet.

  4. Brush the tops with egg wash.

  5. Let them sit for about 30 minutes.

  6. Bake in a moderate oven at 350°F (175°C) until done.

What each ingredient does

All-purpose flour
Forms the structure of the paste so it holds its shape when rolled and cut.
Treacle
Adds sweetness, moisture, and a dark color to the dough.
Ground ginger
Provides the warm, spicy flavor that defines the gingerbread.

The step that matters

Resting the paste overnight. Resting lets the flour fully hydrate and the gluten relax, so the paste rolls out evenly without springing back and the cut shapes keep their outlines in the oven.

Swap the ginger

How well each one fits the dish's main ingredients (flour, molasses, clove):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Nutmegfits better
  4. Gingerthe original

Fit is the average pairing score against flour, molasses, clove. Candidates are from the same food group and used in at least 100 recipes.
