Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Separate the egg whites from the yolks.

  2. In a bowl, mix the yolks with sugar and lemon raspings until light and white.

  3. Whisk the egg whites until stiff peaks form.

  4. Gently fold the egg whites into the yolk mixture.

  5. Sift the flour and mix it with the crumbled brown bread.

  6. Combine the flour mixture with the egg mixture.

Bake

  1. Pour the batter into small tins lined with six sheets of paper.

  2. Bake in a moderate oven at 350°F (175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the batter lift and an airy, light structure.
Sugar
Sweetens the batter and helps the yolks whip to a light, pale texture.
Flour
Provides the main structure that holds the biscuit together as it bakes.
Brown bread
Adds body, toasty flavour and a crumbly, slightly dense texture to the biscuits.

The step that matters

Folding the egg whites into the yolk mixture. Whipped whites hold air that gives the biscuits lift. Stirring vigorously or deflating them with heavy mixing knocks out air and leaves a dense result, so the fold should be gentle.
