Italian Confectioner

Ingredients

Directions

  1. Roll out confectionery paste to ¼ inch thick, sized for your dish.

  2. Line a mold with pale pink almond paste and create a pedestal with baked almond paste.

  3. Ensure everything is dry and well joined, then place in the stove.

  4. Boil syrup to fill the hollow of the mold, representing water.

  5. Model little swans in gum paste and place them in the syrup.

  6. Bake for three hours, then create a small hole to drain the syrup, leaving a crust with swans.

  7. Build a rock on the pedestal using rock-sugar and biscuits, cementing with caramel.

  8. Finish the piece with decorations like a pagoda or spun sugar ornaments.
