Brown-Bread Biscuits

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Separate the egg whites from the yolks.

  2. In a bowl, combine the yolks, sugar, and lemon raspings; stir until light and very white.

  3. Whisk the egg whites until stiff peaks form.

  4. Gently fold the yolk mixture into the egg whites.

  5. Sift and fold in the flour and crumbled brown bread.

Bake

  1. Pour the batter into small tins (hearts, ovals, or squares) lined with six sheets of paper.

  2. Bake in a moderate oven at 350°F (175°C) until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites provide the airy lift and structure that hold the biscuits together.
Sugar
Creamed with the yolks for sweetness and a light, pale texture.
Flour
Sets during baking to give the biscuits their firm, sliceable structure.
Brown bread
Crumbs add body, a toasty flavour and some moisture to the batter.

The step that matters

Folding the yolk mixture into the egg whites. Folding gently keeps the whipped whites from deflating. Their trapped air is what makes the biscuits rise and stay light, so overmixing leads to dense results.
