Why it works: Rice and cinnamon match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 2,137 recipes. Both carry guaiacol, which smells smoky, sweet. The science ↓

A Souffle of W'hole Rice

Ingredients

Directions

Prepare the mold

  1. Line a mold with thin tart paste and place bread inside to keep the paste in place; bake until firm.

  2. Alternatively, make small paper cases with high sides to prevent the souffle from rising over.

Make the rice base

  1. In a saucepan, combine milk, rice, cinnamon, and lemon peel; boil gently until rice is tender, stirring occasionally.

  2. Once cooked, add butter, sugar, and brandy; mix well and let cool.

  3. Remove lemon peel and cinnamon from the rice mixture.

Assemble and bake

  1. Whisk egg whites until frothy.

  2. Fold in the whisked egg whites gently.

  3. Fill the mold halfway or three-quarters full, sift sugar over the top, and bake.

  4. Serve immediately after removing from the oven to prevent sinking.

What each ingredient does

Egg whites
Whisked into foam, they trap air and lift the soufflé as it bakes.
Rice
Cooked in milk until tender, it forms a thick base that gives the soufflé body.
Egg yolks
Enrich the base and add richness and structure as they set in the oven.
Butter
Adds fat, giving the base a smooth, rich texture and flavour.
Milk
Cooks with the rice to form a creamy, moist base.

The step that matters

Folding in the egg whites. Whites hold air only while whisked; folding gently keeps that air in the mixture, so the soufflé rises. Stirring hard deflates it and the soufflé falls flat.
