Potato Cream Cake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Roll out a bottom for the cake from plain cake dough.

  2. Press it up on the sides.

  3. Set aside to rise.

Make the potato cream

  1. Separate the eggs.

  2. Beat the yolks and sugar together.

  3. Gradually add the mixture to the grated potatoes.

  4. Sift in the flour and mix well.

  5. Add the melted butter and flavor.

  6. In a separate bowl, beat the egg whites until stiff.

  7. Fold the egg whites into the potato mixture.

Bake and serve

  1. Spread the potato cream evenly over the cake base, about 1 inch thick.

  2. Bake in a preheated oven at 400°F (200°C) until done.

  3. Once baked, sift powdered sugar and cinnamon over the top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trapped into stiff foam lighten the potato cream and help it set when baked.
Potatoes
Grated potatoes form the bulk of the filling, giving it a moist, dense body.
Butter
Melted butter adds richness and fat, giving the cream a tender texture.
Flour
Flour gives the potato mixture enough structure to hold its shape when baked.
Sugar
Sugar sweetens the filling and helps it brown lightly in the oven.

The step that matters

Folding in the egg whites. Stiffly beaten whites hold air that makes the cream light. Stirring them in vigorously knocks that air out, leaving a heavier, denser cake.

Swap the potato

How well each one fits the dish's main ingredients (flour, butter, cream, sugar, egg, cinnamon):
