German Cream Cake

Oven, in the book's wordsA medium oven

Ingredients

Directions

The book says “a medium oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Melt the butter and let it cool.

  2. Beat in the egg yolks and whole egg gradually.

  3. Add the sugar, chopped almonds, lemon rind, mace, and cinnamon.

  4. Roll out a thin sheet of dough and let it prove.

  5. Spread the mixture evenly over the dough.

  6. Sprinkle with sultana raisins and sliced almonds.

  7. Bake in a moderate oven at 350°F (175°C) until done.

  8. Dust with powdered sugar before serving.
