Ginger Bread

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix together the molasses and water.

  3. In another bowl, combine the flour, baking soda, and ginger.

  4. Add the dry ingredients to the molasses mixture and stir until well combined.

  5. Melt the lard and mix it into the batter.

Bake

  1. Pour the batter into a greased baking pan.

  2. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Adds dark color, moisture, and a deep sweet flavor to the batter.
Flour
Provides the structure that holds the batter together as it bakes.
Baking soda
Reacts with the acidic molasses to release gas, helping the cake rise and lighten.
Lard
Adds fat for tenderness and a moist, rich crumb.
Ginger
Supplies the warm, spicy aroma that defines gingerbread.

The step that matters

Stirring the dry ingredients into the molasses mixture. Mixing until just combined keeps the batter tender. Overmixing develops gluten in the flour, which can make the gingerbread tough and dense.

Swap the ginger

How well each one fits the dish's main ingredients (molasses, flour):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Allspicefits about as well
  4. Gingerthe original

Fit is the average pairing score against molasses, flour. Candidates are from the same food group and used in at least 100 recipes.
