Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Brown Loaf Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the brown sugar and butter together until light and creamy.

  2. Gradually add the sour milk, molasses, beaten eggs, baking soda, spices, and flour, stirring constantly. Mix thoroughly and fold in the currants and raisins, dredged with a little flour.

Bake

  1. Pour the batter into a greased loaf pan and bake in a moderate oven at 350°F (175°C) until a toothpick comes out clean.

What each ingredient does

Eggs
Bind the batter and add structure and richness as the cake sets.
Baking soda
Reacts with the acidic sour milk and molasses to produce gas that helps the cake rise.
Butter
Creamed with the sugar to trap air and add tenderness and richness.
Brown sugar
Adds sweetness, moisture and a deep caramel flavor, and helps browning.
Molasses
Adds moisture, dark color and a robust flavor, and contributes to browning.
Flour
Provides the main structure that sets as the batter bakes.

The step that matters

Adding the baking soda with the sour milk and molasses. Baking soda needs an acid to react and release gas. Adding it to the wet ingredients and mixing thoroughly spreads it evenly so the loaf rises uniformly instead of in patches.

Swap the allspice

How well each one fits the dish's main ingredients (sugar, butter, milk, molasses, egg, cinnamon, clove):

  1. Nutmegfits better
  2. Allspicethe original
  3. Cardamomfits about as well
  4. Gingerfits about as well

Fit is the average pairing score against sugar, butter, milk, molasses, egg, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
