Plunder Pretzels

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll the yeast-raised pastry into a sheet about ½ inch thick.

  2. Brush the sheet with melted butter and sprinkle with a mixture of sugar and a little cinnamon.

  3. Fold the pastry into thirds from the upper and lower ends.

  4. Roll out to a width of about 12 inches and cut into two strips about ½ inch wide.

  5. Twist the strips a few times and shape them into pretzels on well-greased baking sheets.

  6. Allow to rise until they are half their original size.

  7. Brush with a strong solution of egg wash.

  8. Bake in a moderate oven at 350°F (175°C) until golden.

  9. After cooling, frost with fondant flavored with lemon or vanilla.
