Moravian Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Make the sponge

  1. Mix mashed potatoes, potato water, sugar, dissolved yeast, and enough flour to make a thick batter.

  2. Cover and keep in a warm place (~80°F).

  3. Beat occasionally.

Make the dough

  1. At 10 or 11 PM, mix in sugar, eggs, lard and butter, a pinch of cinnamon, and enough flour to form a non-sticky dough.

  2. Cover and let rise in a warm place (70°F–75°F) until morning.

  3. Shape into loaves or desired forms and let rise for 30 minutes.

Bake and serve

  1. Prepare the sauce by mixing sugar, hot water, butter, and cinnamon until darkened.

  2. Spread the sauce over the cake and bake in a moderate oven (350°F).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Add moisture and starch that keep the crumb soft and tender.
Yeast
Produces gas as it ferments, making the dough rise and become airy.
Eggs
Add structure and richness that help the cake hold its shape.
Lard and butter
Add fat that tenderizes the crumb and gives a rich flavor.
Sugar
Adds sweetness and helps the crust brown during baking.
Flour
Provides gluten and structure that give the dough its body.

The step that matters

Long overnight rise in a warm place. Yeast needs steady warmth to ferment well; if the dough gets too cold the rise stalls, and if too hot it can over-ferment and collapse. Watching the dough rather than the clock helps the cake turn out light.

Swap the potato

How well each one fits the dish's main ingredients (sugar, flour, egg, butter, cinnamon, sauce):

  1. Sweet potatofits better
  2. Shallotfits better
  3. Arrowrootfits better
  4. Potatothe original

Fit is the average pairing score against sugar, flour, egg, butter, cinnamon, sauce. Candidates are from the same food group and used in at least 100 recipes.
