Ingredients

Directions

Prepare the nuts

  1. Heat the nuts in an open iron vessel over moderate heat, stirring until the skins begin to separate.

  2. Remove from heat and winnow the nuts, then lightly scorch them again.

  3. Pound the nuts in a heated iron mortar until they form an oily paste.

Make the chocolate

  1. Cut the vanilla into small pieces and pound it fine with part of the sugar.

  2. Mix the vanilla with the nut paste and boil half of the sugar before adding it.

  3. Pour the mixture into molds.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Prepared nuts
Provide the main body and oily fat that give the paste its texture.
Sugar
Adds sweetness and bulk, and helps set the mass once boiled.
Vanilla
Contributes the primary aroma of the finished confection.

The step that matters

Pound the nuts until an oily paste forms. Nuts must be ground fine enough that their oils release and blend smoothly; under-grinding leaves a gritty texture, while the heated mortar keeps the oils fluid so the paste binds evenly.

Swap the mace

How well each one fits the dish's main ingredients (nuts, sugar, vanilla, cinnamon, clove):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against nuts, sugar, vanilla, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
