Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gooseberries
Provide the main fruit flavour and, once pulped, the body of the pudding.
Eggs
Bind the pulp and bread crumbs and set the pudding as it bakes.
Butter
Adds richness and a soft, tender texture to the filling.
Bread crumbs
Thicken the pulp and give the filling a soft, absorbent body.

The step that matters

Beat the gooseberries through a coarse sieve. Gooseberry skins and seeds stay behind in the sieve, so pressing the cooked fruit fully through gives a smooth pulp. Leftover skin or seeds would make the filling gritty.
