To Boil a Turbot

Ingredients

Directions

Prepare the fish

  1. Wash the turbot clean and rub it with vinegar to firm it up.

  2. Place the turbot on a fish plate, white side up, and cover it with a cloth, pinning it tight under the plate.

Cook and serve

  1. Boil gently in hard water with plenty of salt and vinegar, skimming to prevent discoloration.

  2. Once cooked, drain the turbot, carefully remove the cloth, and transfer it to a serving dish.

  3. Top with fried oysters or oyster patties, and serve with lobster or gravy sauce in sauce boats.

  4. Garnish with crispy parsley and pickles.

What each ingredient does

Turbot
Is the main fish, poached gently so its flesh stays moist and flaky.
Vinegar
Rubbed on the fish to firm the flesh and added to the water to help keep it white.
Fried oysters or oyster patties
Adds crisp, savoury richness on top of the mild poached fish.

The step that matters

Boil gently and skim. Boiling hard breaks the delicate flesh apart, and skimming removes foam and impurities that can discolour the white fish. Gentle simmering keeps the turbot intact and pale.

Swap the parsley

How well each one fits the dish's main ingredients (turbot, vinegar, oyster, lobster):

  1. Capersfits better
  2. Tarragonfits about as well
  3. Parsleythe original
  4. Garlicfits about as well
