Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Releases rich meaty flavor into the broth as it simmers with the shells.
Green split peas
Break down during simmering to thicken the soup and give it body.
Crawfish (in the method)
Shells build the flavorful base while the tails supply the seafood meat.
Lobster
Shells add depth to the broth, and the meat and coral add richness.
Turnip
Adds earthy sweetness and body as it cooks down into the broth.

The step that matters

Stew the shells on low heat. Gentle, low heat extracts flavor from the shells and mutton slowly, while a hard boil can make the broth cloudy and greasy.

Swap the mace

How well each one fits the dish's main ingredients (fish, lobster, mutton, peas, turnip, carrot, onion):

  1. Celeryfits better
  2. Parsleyfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against fish, lobster, mutton, peas, turnip, carrot, onion. Candidates are from the same food group and used in at least 100 recipes.
