What each ingredient does

Eggs
Bind the mixture and help it set firm as it cooks.
Suet
Adds fat that keeps the pudding moist and tender.
Stale bread crumbs
Soak up liquid and give the pudding body and structure.
Flour
Provides starch that thickens and gives the pudding its firm shape.
Brown sugar
Adds sweetness and a deeper, molasses-like flavour.
Raisins
Add sweetness, chewiness and moisture throughout the pudding.

The step that matters

Long boil at the time of making. The pudding needs a full 6-hour boil so the eggs and flour cook through and the dense mixture sets. Undercooking leaves it wet and heavy in the centre.

Swap the currant

How well each one fits the dish's main ingredients (raisin, bread, flour, sugar, lemon, nutmeg, egg):

  1. Figfits better
  2. Vanillafits better
  3. Orangefits better

Fit is the average pairing score against raisin, bread, flour, sugar, lemon, nutmeg, egg. Candidates are from the same food group and used in at least 100 recipes.
