Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef suet
Provides fat that keeps the pudding moist and rich as it steams.
Bread crumbs
Absorb liquid and give the pudding a soft, tender body.
Eggs
Bind the mixture and help it set firm while cooking.
Raisins
Add sweetness and chewy texture throughout the pudding.
Brandy
Adds aroma and flavour, and carries the flame when lit at serving.

The step that matters

Boiling for 6 hours. The pudding must be sealed and kept at a steady simmer for the full time so the suet and eggs cook through evenly. Letting the water boil dry or drop too low leaves the centre dense and undercooked.

Swap the currant

How well each one fits the dish's main ingredients (beef, bread, raisin, almond, egg, brandy, sherry):

  1. Figfits better
  2. Vanillafits better
  3. Apricotfits better
