Why it works: Peach and cinnamon match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 625 recipes. Both carry methyl cinnamate, which smells strawberry. The science ↓

Peach Butter

Ingredients

Directions

Prepare the peaches

  1. Peel the ripe peaches and place them in a kettle with enough water to cover them.

  2. Boil the peaches until soft, then strain through a colander to remove the stones.

Cook and season

  1. Add ¼ pound of sugar for each quart of peaches and boil slowly for 1 hour, stirring often to prevent burning.

  2. Season with ground spice and cinnamon to taste.

What each ingredient does

Ripe peaches
Provide the fruit that cooks down into the thick, sweet body of the butter.
Sugar
Adds sweetness and helps thicken the fruit as its water evaporates during long cooking.

The step that matters

Stirring during the slow boil. Peach sugars and pulp scorch easily on the bottom of a pot over a long simmer. Frequent stirring spreads heat evenly and prevents burnt flavour and dark specks.

Swap the peach

How well each one fits the dish's main ingredients (sugar, cinnamon):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better

Fit is the average pairing score against sugar, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
