Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Provide the bulk and structure that hold the pudding together.
Suet or clarified dripping
Adds richness and moisture, keeping the pudding tender as it steams.
Marmalade
Adds sweetness, acidity and flavour through the pudding.
Egg
Binds the mixture and helps it set as it cooks.
Bicarbonate of soda
Reacts with the acidic marmalade and lemon to lighten the pudding.

The step that matters

Steam for 1.5 to 2 hours. Steaming gently and steadily cooks the pudding through without drying it out. Keep the water topped up and at a steady simmer so the basin does not boil dry.
