Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the bulk of the pudding and absorb moisture to give it body.
Suet
Adds fat that keeps the pudding moist and rich as it steams.
Marmalade
Adds sweetness, citrus flavour and moisture to the pudding.
Bicarbonate of soda
Reacts with the acidic marmalade and lemon to lighten the texture.
Egg
Binds the ingredients together and adds structure as it sets.

The step that matters

Steaming for the full time. Steaming gently and for the whole 1.5 to 2 hours cooks the dense mixture through and sets it. Lifting the lid or letting the water boil dry can leave the pudding heavy or unevenly cooked.

Swap the lemon

How well each one fits the dish's main ingredients (bread, sugar, egg):

  1. Vanillafits better
  2. Datesfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against bread, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
