Ingredients

Directions

Prepare

  1. Grind the walnuts and almonds with a special grinder until they become flour.

  2. While the eggs are beating, grate the bread and prepare the rind and juice from the orange and the lemon; add vanilla, maraschino liquor, rum, and allspice to the rind and juice, keeping the bread separate.

  3. Grease a 14 × 10 inch pan heavily and flour it well.

Make the batter

  1. Beat 8 egg yolks and 4 egg whites with sugar for about ½ hour on speed 8.

  2. When the egg yolks are ready, beat the reserved 4 egg whites until stiff.

  3. Fold the bread, orange‑lemon mixture, and the remaining ingredients into the yolk mixture, alternating them gently to preserve the air.

Bake and serve

  1. Bake at 325 °F for about 1 hour, preheating the oven beforehand.

  2. When baked, cool for 10–15 minutes and turn the cake out onto a dish.

  3. Frost the cake or dust with powdered sugar, as desired.

  4. Serve.

What each ingredient does

Eggs
Yolks and whipped whites provide structure and lift, giving the cake its airy crumb.
Walnuts
Ground into flour, they add body and a moist, tender texture in place of wheat flour.
Almonds
Ground into flour, they add richness and a moist, tender crumb.
Sugar
Sweetens the batter and, when beaten with the yolks, helps build a stable foam.
Grated dry bread
Adds light body and absorbs liquid, helping keep the crumb moist.

The step that matters

Folding in the whites. Stiffly beaten whites hold the batter's air. Folding gently, rather than stirring, preserves that air so the cake rises and stays light instead of deflating.

Swap the walnut

How well each one fits the dish's main ingredients (egg, sugar, almond, orange, lemon, bread, vanilla):

  1. Pistachiofits better
  2. Chestnutfits better
