Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes
Adds moisture and a tender texture to the dough.
Eggs
Bind the dough and add structure so it holds around the plums.
Flour
Provides the main structure of the dough wrapper.
Farina
Adds body to the dough, helping it hold together while cooking.
Plums
Provide the sweet, juicy fruit filling inside each dumpling.

The step that matters

Fold the dough fully around each plum. Any gap in the dough lets the fruit's juice escape into the boiling water, and a thin or torn wrapper can split during cooking, so each plum must be fully sealed.

Swap the potato

How well each one fits the dish's main ingredients (plum, egg, flour, sugar):

  1. Sweet potatofits better
  2. Arrowrootfits better
  3. Shallotfits better
  4. Potatothe original

Fit is the average pairing score against plum, egg, flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
