What each ingredient does

Eggs
Egg yolks thicken the soup and give it a smooth, rich body when gently heated.
Flour
Flour cooked in butter forms a roux that thickens the milk and cooking liquid.
Milk
Milk adds creaminess and mild sweetness to the soup base.
Butter
Butter carries flavor and enriches the base along with the flour roux.
Cauliflower
Cauliflower forms the main body of vegetables, adding mild flavor and soft texture.
Shrimp
Shrimp add protein and a delicate seafood flavor, heated just until through.

The step that matters

Adding the egg-yolk mixture. Egg yolks can scramble if the soup is too hot. Tempering them with hot cooking liquid first, then stirring gently over low heat, keeps the soup smooth and thick.

Swap the peas
