Directions

Prepare

  1. Preheat oven to 325°F. Butter the bottom only of a 2‑quart casserole or soufflé dish.

  2. Combine bread cubes and lemon zest in a large bowl. Set aside.

Make the custard base

  1. Combine whipping cream, milk, sugar, butter, and salt in a heavy saucepan.

  2. Over medium heat, cook until butter melts, stirring occasionally.

  3. Pour the cream mixture over the bread mixture, and toss.

  4. Allow the mixture to cool.

  5. Lightly beat the egg yolks. Beat in the lemon juice.

  6. Stir the mixture into the bread mixture. Set aside.

Bake and serve

  1. Beat egg whites in a large bowl of electric mixer until stiff peaks form. (Do not over‑beat.)

  2. Gently fold egg whites into bread mixture.

  3. Pour bread mixture into prepared dish.

  4. Bake for 1 hour, or until a knife inserted 1 inch from center comes out clean. The top of the pudding should be golden brown.

What each ingredient does

Eggs
Whites whipped to stiff peaks give the pudding its light, airy lift; yolks enrich the custard.
Bread cubes
Soak up the cream mixture and set into a tender, spoonable body.
Whipping cream
Adds fat and richness, giving a smooth, creamy texture.
Whole milk
Adds moisture and milk proteins that help the custard set softly.
Granulated sugar
Sweetens the pudding and contributes to browning on top.
Lemon juice
Adds acidity that brightens the flavor and cuts the richness of the custard.

The step that matters

Folding in the egg whites. Whites beaten to stiff peaks trap air that gives the pudding its lift. Over-beating makes them dry and grainy, and vigorous stirring deflates them, so fold gently until just combined.
