Why it works: Gelatin and cream match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓

What each ingredient does
- Egg yolks
- Thicken the sauce and add richness as they whip over heat.
- Unflavored gelatin
- Sets the mixture so it holds its shape when unmolded.
- Cooked rice
- Forms the body of the dessert, giving it a soft, creamy texture.
- Milk
- Cooks with the rice to make a thick, creamy base.
- Prepared whipped topping
- Adds lightness and airiness to the rice mixture.
- Sugar
- Sweetens the custard and balances the tart lemon and sherry.
The step that matters
Whip the yolk mixture over boiling water until thick and fluffy. Egg yolks thicken gently with heat, and whipping adds air. Keeping the mixture moving over simmering water, not boiling hard, helps prevent the yolks from scrambling while it thickens.
