Ingredients

Directions

Prepare the apricots and agar

  1. Soak apricots in 2 cups apricot juice for 15 minutes.

  2. Pour remaining 2 cups juice into a heavy-bottomed medium saucepan.

  3. Stir in agar flakes and allow to sit for 10 minutes.

  4. In a large skillet, combine apricots with soaking juice, cinnamon, allspice, nutmeg, and cloves.

  5. Bring to a simmer over medium heat and cook, stirring often, for 15 minutes.

  6. Remove from heat.

Make the pudding

  1. Bring the agar mixture to a slow simmer over low heat and simmer until the flakes are dissolved.

  2. Add soy milk, stirring often to prevent it from burning.

  3. In a small bowl, dissolve kudzu in 1/4 cup water.

  4. When the kudzu is completely dissolved, whisk it into the soy milk mixture.

  5. Add maple syrup and vanilla extract.

  6. In a food processor, process apricots until smooth.

  7. Add the apricot puree to the soy mixture and cook, stirring occasionally, for 10 minutes.

Set and serve

  1. Transfer the pudding to a shallow casserole, bring to room temperature, then refrigerate until set, about 1 hour.

  2. When ready to serve, process the mixture in a food processor until smooth.

  3. Serve in parfait glasses with a dollop of tofu cream if desired.

What each ingredient does

Agar-agar flakes
Gels the liquid as it cools, giving the pudding its set-firm body.
Kudzu
Thickens the soy milk mixture, adding a smooth, glossy texture.
Soy milk
Forms the creamy base of the pudding and adds richness.
Dried apricots
Provide fruity flavor, sweetness, and body when puréed into the pudding.
Maple syrup
Adds sweetness and a caramel-like depth of flavor.

The step that matters

Dissolving the agar flakes fully. Agar only gels once its flakes have fully dissolved in simmering liquid. If they are undissolved or the mixture is not kept at a proper simmer, the pudding may fail to set evenly.
