Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Long-grain rice
Its starch thickens as it cooks, giving the pudding its body.
Evaporated milk
Adds creaminess and richness, and its milk solids help the pudding set as it cools.
Sugar
Adds sweetness and helps give the pudding a softer, smoother texture.
Butter
Adds fat for richness and a smoother mouthfeel.
Raisins
Add chewy texture and concentrated sweetness.

The step that matters

Stir regularly and watch the water level while the rice cooks. Rice starch settles and sticks to the bottom of the pot, which can scorch the pudding. Stirring keeps the grains moving, and adding water as needed keeps the mixture loose enough to cook evenly.

Swap the raisin

How well each one fits the dish's main ingredients (evaporated milk, sugar, rice, cinnamon, butter, clove, nutmeg):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Raisinthe original

Fit is the average pairing score against evaporated milk, sugar, rice, cinnamon, butter, clove, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
