What each ingredient does

Black eyed peas
Provide the main body and protein of the dish, holding their shape while simmering.
Potatoes
Add starchy bulk and softness, thickening the mixture slightly as they cook.
Desiccated coconut
Adds fat, richness and a sweet, nutty flavour that softens the spices.
Garlic
Gives a pungent aromatic base when sizzled in oil at the start.
Turmeric
Contributes a warm, earthy flavour and a deep yellow colour.
Lime or lemon juice
Adds acidity that brightens the flavours and balances the richness of the coconut.

The step that matters

Sizzling the garlic and chilli powder. Garlic burns quickly in hot oil and turns bitter, so it needs only half a minute of sizzling and close attention before the other spices go in.
