What each ingredient does

Ground wheat
Forms the thick, starchy body of the sweetbread as it boils and thickens.
Ground walnuts
Add bulk, nutty flavor and a slightly oily, tender texture to the mixture.
Sugar
Adds sweetness and helps flavor the wheat as it cooks.

The step that matters

Boil the wheat slowly from cold water. Wheat starch thickens gradually as it gelatinizes in water. Boiling at too high a heat can scorch the bottom and leave lumps or a sticky, uneven texture, so low to medium heat and patient stirring give a smooth result.

Swap the lemon
