Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Forms the structure and soaks up the custard as it sets into a soft layered pudding.
Eggs
Set the milk custard so the pudding holds together when cooked.
Milk
Forms the liquid custard that soaks into the bread and gives a soft, creamy texture.
Sugar
Adds sweetness and helps the custard brown lightly on the surface.
Dried fruit
Adds sweetness and chewy texture within the layers.

The step that matters

Allow to soak for 30 minutes before cooking.. Soaking lets the bread absorb the egg and milk custard. Without it, the bread stays dry in patches and the pudding sets unevenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, egg, bread):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Allspicefits less well

Fit is the average pairing score against milk, sugar, egg, bread. Candidates are from the same food group and used in at least 100 recipes.
