What each ingredient does

Stale bread crumbs
Form the body of the pudding, soaking up the milk and egg to set into a soft custard.
Eggs
Bind the mixture and help it set as it bakes into a custard.
Milk
Provides the liquid that softens the bread and forms the custard base.
Cocoa
Adds chocolate flavor and color to the pudding.
Sugar
Adds sweetness and helps balance the bitterness of the cocoa.
Heavy cream
Adds richness and fat to the smooth, silky sauce.

The step that matters

Baking in hot water. Placing the dish in hot water, a water bath, moderates the oven heat so the eggs set gently. Without it, the custard can overcook, turning grainy or curdled.

Swap the cocoa

How well each one fits the dish's main ingredients (bread, milk, nutmeg, egg, sugar, sauce, vanilla):

  1. Chestnutfits better
  2. Almondfits better
  3. Pistachiofits better
