Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Risotto rice
Starch that thickens as it cooks, giving the pudding a creamy, soft body.
Half and half
Adds fat and liquid, making the pudding rich and smooth.
Granulated sugar
Adds sweetness and helps give the pudding its body.
Butter
Adds fat for richness and a silky mouthfeel.

The step that matters

Cooking over simmering water. Gentle, indirect heat in the double boiler keeps the milk mixture from scorching or curdling on the base of the pan. Rice thickens slowly as it absorbs liquid, so the pudding needs steady low heat and occasional stirring to stay smooth.
