Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the filling as it heats, giving it a soft, sliceable body.
Butter
Adds richness and a smooth, tender mouthfeel to the filling.
Sugar
Sweetens the filling and helps balance the sharpness of the lemon.
Lemons
Provide acidity and aroma from the juice and grated rind.
Eggs
Yolks enrich and set the filling; whites form a foam that browns on top.

The step that matters

Pour the butter-sugar mixture over the hot corn starch mixture. Corn starch must be heated to boiling to swell and thicken fully. Adding the lemon and beaten yolks only after cooling protects the eggs from scrambling in hot liquid.
