Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Whites are beaten to add airy structure to the snow pudding; yolks thicken the custard.
- Corn starch
- Thickens the pudding and the custard as it heats with liquid.
- Milk
- Forms the base of the custard, giving body and richness.
- Lemon juice
- Adds acidity that brightens the flavor of the pudding.
- Sugar
- Sweetens the pudding and custard.
The step that matters
Add the whites of two eggs beaten until stiff. Beaten egg whites trap air to give the pudding its light, foamy texture. If the whites are under-beaten or deflated by stirring too vigorously, the pudding will be dense rather than snowy.
