What each ingredient does

Corn starch
Thickens the filling as it heats with the boiling water, giving it a set, smooth body.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Butter
Adds richness and a soft, creamy texture to the filling.
Lemon
Provides the acidity and aroma that define the pie's flavour.
Egg
Adds richness and helps the filling set as it bakes.

The step that matters

Pour the hot starch mixture over the sugar and butter. Starch needs to be fully gelatinised by boiling water to thicken properly, so the starch mixture must be boiling hot when added. Adding the egg only after the mixture cools prevents it from scrambling.
