Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the filling as it heats, giving it a set, sliceable body.
Eggs
Yolks enrich and thicken the filling; whites whipped with sugar form the browned topping.
Sugar
Sweetens the filling and helps stabilise the whipped egg white topping.
Lemons
Rind and juice add the bright, acidic lemon flavour that defines the pie.

The step that matters

Let the cornstarch mixture come to a boil. Cornstarch only thickens fully once it reaches a boil; stopping early leaves the filling thin and runny, so it will not set properly when cooled.

Swap the lemon

How well each one fits the dish's main ingredients (corn, sugar, egg):

  1. Vanillafits better
  2. Coconutfits about as well
  3. Raisinfits about as well
  4. Lemonthe original

Fit is the average pairing score against corn, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
