What each ingredient does

Egg whites
Whipped into foam, they give the set dessert its light, airy structure.
Gelatine
Sets the liquid mixture as it cools, giving the island its firm, molded shape.
Sugar
Sweetens the mixture and helps stabilize the dessert's texture.
Milk
Forms the base of the custard, providing moisture and creamy body.
Corn starch
Thickens the custard as it heats, giving it a smooth, pourable body.
Lemon
Adds acidity and bright aroma to the sweet mixture.

The step that matters

When nearly cold, add beaten egg whites, lemon juice and rind.. Gelatin starts to set as the mixture cools. Folding in the whites while it is still nearly cold, not hot or fully set, keeps the foam from collapsing and avoids lumps, so the mixture stays light and holds its shape.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, milk, corn, egg):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, milk, corn, egg. Candidates are from the same food group and used in at least 100 recipes.
