What each ingredient does

Bread crumbs
Soak up the milk to form a soft, set body for the pudding.
Egg
Binds the mixture and helps it set as it bakes.
Cocoa
Gives the pudding its chocolate flavour and colour.
Marshmallows (in the method)
Soften and melt into the cream, adding sweetness and a light, chewy texture.

The step that matters

Bake until just set. Egg-thickened puddings firm as they cool, and overbaking can make them grainy or watery. Check that the centre is nearly set before removing them from the oven.

Swap the cocoa
