What each ingredient does

Eggs
Bind the mixture and add structure as they set during boiling.
Butter
Adds richness and fat that softens the crumb texture.
Bread crumbs
Provide bulk and absorb moisture to form the pudding body.
Potatoes
Add moisture and a tender, dense body to the pudding.
Molasses
Adds sweetness, dark color and a deep flavor.
Raisins
Add sweetness and chewy texture throughout the pudding.

The step that matters

Adding milk. The mixture should be moist enough to hold together without being wet. Too little liquid makes the pudding crumbly, while too much makes it heavy and dense once boiled.

Swap the potato

How well each one fits the dish's main ingredients (butter, bread, raisin, molasses, egg, nutmeg):

  1. Sweet potatofits better
  2. Shallotfits better
  3. Arrowrootfits about as well
  4. Potatothe original

Fit is the average pairing score against butter, bread, raisin, molasses, egg, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
