Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the filling as it cooks with the hot water.
Egg
Adds richness and helps set the filling.
Sugar
Sweetens the filling and balances the lemon's acidity.
Lemon
Provides the tart, bright flavour of the pie.

The step that matters

Pour the boiling water over the cornstarch mixture. Cornstarch only thickens when it is heated in liquid, and it needs to be stirred well so it does not clump. Adding the hot water to a well-mixed slurry lets the starch gel evenly into a smooth filling.
