Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites beaten in add structure and lightness, and yolks thicken the filling as it sets.
Corn starch
Thickens the filling so it sets and holds its shape when cut.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemons
Rind and juice add aroma and acidity that give the pie its tangy flavor.
Melted butter
Adds fat for richness and a smooth, tender texture in the filling.

The step that matters

Beating the whites in last. Whipped egg whites are fragile and deflate when overmixed, so folding them in gently at the end keeps the filling light and airy rather than dense.

Swap the lemon

How well each one fits the dish's main ingredients (butter, corn, sugar, egg):
