What each ingredient does

Bread crumbs
Soak up the milk and set the body of the pudding.
Egg yolks
Enrich and set the custard so it holds together when baked.
Egg whites
Whip into a froth to form a light, glossy meringue topping.
Milk
Forms the custard base that the crumbs and yolks set into.
Powdered sugar (in the method)
Sweetens the meringue and helps it hold its shape.

The step that matters

Browning the meringue topping. Whipped egg whites are unstable and can collapse or weep if underbaked or overbaked. Watch the topping closely so it browns evenly while the custard beneath stays set.
