What each ingredient does

Flour
Forms the structure of the pudding as it steams and sets.
Soda
Reacts to lighten the batter so the pudding rises and stays tender.
Butter
Adds richness and fat that makes the creamed sauce smooth and flavorful.
Egg
Helps bind and thicken the sauce as it cooks.
Pulverized sugar
Sweetens the sauce and blends with butter to a creamy texture.

The step that matters

Let the sauce boil until thick. Egg and sugar sauces can curdle or stay runny if overheated or underheated, so it needs steady attention until it thickens smoothly.

Swap the clove

How well each one fits the dish's main ingredients (flour, milk, cinnamon, sugar, butter, vanilla, egg):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Clovethe original
  4. Allspicefits about as well

Fit is the average pairing score against flour, milk, cinnamon, sugar, butter, vanilla, egg. Candidates are from the same food group and used in at least 100 recipes.
