Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the filling and help it set into a custard.
Corn starch
Thickens the lemon mixture so the filling holds its shape when cut.
Lemon juice
Provides the sharp acidity that balances the sweetness of the filling.
Sugar
Sweetens the filling and balances the sharpness of the lemon.

The step that matters

Beating the egg whites to a stiff froth. Whites must be whipped until they hold stiff peaks, since their trapped air is what makes the topping light and lets it brown evenly in the oven.
