What each ingredient does

Cranberries
Provide the tart, fruity flavour that forms the pudding's filling.
Eggs
Bind the mixture and help it set as it cooks.
Sugar
Sweetens the cranberries and balances their tartness.
Grated bread crumbs
Add body to the paste and help it hold its shape.
Melted butter
Adds richness and a tender, fat-based texture.
Sour milk
Adds acidity and moisture to the batter.

The step that matters

Cool the cranberries before spreading. Warm cranberries soften the paste and make it tear or slide when rolled. Letting the fruit cool firms the filling so it stays in place inside the roll during boiling.
